Ingredients
- 1 medium-sized pumpkin
- 1 cup uncooked rice
- 1/2 cup dried apricots, chopped
- 1/2 cup dried plums, chopped
- 1/2 cup almonds, slivered
- 1/2 cup walnuts, chopped
- 1/4 cup honey
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
Preparation Steps
- Cut off the top of the pumpkin and remove the seeds and strings.
- In a bowl, mix the rice, dried fruits, nuts, honey, cinnamon, and nutmeg.
- Stuff the pumpkin with the rice mixture and place the pumpkin top back on.
- Bake in a preheated oven at 375°F (190°C) for about 1.5 hours, or until the pumpkin is tender.
- Remove from the oven, let it cool slightly, and then serve by cutting it into wedges, ensuring each serving includes both pumpkin and the filling.
